In 1678, King Louis XIV ordered a very large kitchen garden to be laid out in Versailles, in which the master gardener M. de La Quintinie cultivated all kinds of tasty items. The king required fruit and vegetables all year round, so the gardener developed the use of growing them under cloches which made it possible to produce out of season: strawberries, melons, cress and all kinds of salads, sorrel, aubergines (originally from India), cucumbers, asparagus and above all peas, which the king adored.
